Pumpkin, Pumpkin Everywhere!

My oh my! I am so thrilled it's pumpkin season! Well, close enough anyways.
I was looking for a perfect little dessert and a distraction from my Shakespeare essay that I am completely avoiding. So I came up with this, Pumpkin Spice Microwave Mug Cake!
Ingredients:
2 tbsp Butter
2 tbsp Brown Sugar
1/2 Egg
1/2 tsp Vanilla
3 tbsp Pumpkin Puree
4 tbsp Flour
1/2 tsp Baking Powder
pinch of Salt
1/4 tsp Pumpkin Pie Spice

Mix everything together in your favorite microwave safe mug (a big one works best!) And if you want it to look nice (not like mine...) then smooth it out on the top before you microwave it!

Microwave on high for 1 1/2 minutes and check it, if it isn't quite done then microwave at 30 second intervals  until it is done, mine took 2 minutes.
When it is done throw a little of your favorite icing on the top and voila! Instant dessert!

Literacy

The first of my new adventures is I've been made Director of Literacy and Education Projects of my Rotaract Club (If you don't know about Rotaract check it out here: http://www.rotary.org/en/studentsandyouth/youthprograms/rotaract/Pages/ridefault.aspx or feel free to contact me for more info as I have been doing this for a few years now). In this position I will now be sitting on the executive, attending are literacy round table meetings, and chairing meetings of the literacy and education projects committee. Literacy and education are especially important to me because I am hoping to teach ESL in South America (Bolivia, Equador, or Chile) after I graduate (master plan, more later). Something we are currently working on is getting involved with a local literacy group called the READ Society to help with their after school programs at local elementary schools. I'm super excited for our club to get involved but I am also incredibly heart broken that my schedule for the WHOLE YEAR doesn't allow me to take part :(

Mission: Finish School

I have recently embarked on the final installment of my undergraduate education! Mind you, a rather long final installment as I am powering through 4 terms in a row, but the final installment none-the-less. I've had many rocky moments throughout my university life so it feels very, very good to see the light at the end of the tunnel.
But as with any normal start of term routine I have picked up procrastinating by watching far too my much TV, my favorite youtube vloggers, and catching up my favorite blogs. As I find myself thinking the same thing I always do when I do this, "why don't I have a blog?" Well I am finally going to dive right in. In this last installment of my education I am not only nearing graduation but I have many great adventures planned for these next few years so hopefully lots of things to write about. Plus, what a better way to procrastinate than blogging!
So this blog is going to be about things I am passionate about, adventures I am going on, possibly some book reviews, and definitely a few recipes. Thanks for reading and enjoy!
